Tofu Red Curry

The popularity of healthy vegetarian and vegan diets has made tofu a kitchen staple. It’s the perfect flavour carrier for this delicious, spicy red Thai curry

Serves: 4

Prep and cook time: 12 minutes

Ingredients

1-3 tsp red curry paste (add more for a spicier taste)
1 medium onion sliced
1 can coconut cream or milk
250ml vegetable stock (to add extra sauce)

3 cups mixed vegetables (capsicum, bamboo shoots, pumpkin, zucchini, peas, beans etc.)
Coriander, chopped
Lime juice

Method

  1. In a wok, heat the curry paste until fragrant (approx. 1-2 mins).
  2. Add the onion and bamboo shoots, stir-fry for 1 min.
  3. Add coconut cream/milk, tofu and veggies. Mix, add vegetable stock if you would like more sauce in the meal.
  4. Reduce heat and stir for 4-5 mins until vegetables are tender.
  5. Add the chopped coriander and squeeze of lime to taste.
  6. Serve hot with quinoa.
