Avocado Coconut Carrot Soup recipe Living Lean
Avocado, Coconut & Carrot Soup

This soup has a lovely silky texture and Thai style flavouring thanks to the addition of coconut milk and yellow curry paste. Perfect for lunch or dinner.

Serves: 6

Prep and cook time: 20 minutes


1 ripe avocado, peeled
1 small clove garlic, chopped
4 medium carrots, peeled and juiced
2 stalks celery, juiced
4 cups (1L) coconut milk

2 tsp (10mL) freshly squeezed lime juice
½ cup (125mL) roasted pine nuts, coarsely chopped
1 tsp (5mL) yellow curry paste
Small handful of fresh cilantro leaves, torn
Himalayan sea salt and freshly ground black pepper


  1. Sweat the garlic, carrot, celery and onion until translucent.
  2. Add tomatoes, chilli and salt.
  3. Gently simmer for 20 minutes.
  4. Add basil and blend.
  5. Top with avocado.
